Aloo Paratha is one of the most famous dish from north India which is prepared with boiled mashed potatoes with few spices in it. It tastes awesome in winters and rainy season lets prepare it

Ingredents for stuffing

2-3 medium sized boiled potatoes

2 chopped green chilles

1 bunchof chopped coriander leaves

1-tsp spoon Red chilly powder

1/2 tsp spoon amchur or dry mango powder

salt to taste

Ingredents for Dough

2 cups of wheat flour /Atta

1 cup of water

2 tbs oil for frying

salt according to your taste buds

Procedure for preparing stuffing

1.Boil the potatoes in a pressure cooker upto 2-3whistles

2.After the cooker cools up peel the boiled potatoes and mash them with a potato masher or with your own hands

3.In a mixing bowl add the mashed potatoes add salt, chopped green chilies, chopped Coriander leaves Amchoor or Dry mango powder, Red chilly powder Mix all the ingredients and keep it side

Note: There should not be any lumps in the potato mix to avoid lumps can grate the boiled potato with a grater as well

Procedure for making the dough

  • In a mixing bowl take 2-3cups of whole wheat flour then add water little by little to make a soft dough add 1tbsp of oil mix it well to make rolling consistency and keep it aside for 15-20mintues to form glutten

Procedure for making Stuffed Aloo Paratha

Pinch the dough into small balls and keep it side then take a medium size dough ball fallatern it and dust it with some flour and roll it in a circle shape with rolling pin

Roll the dough to 4-5inch diameter add 1-2 drops of oil or ghee and spread it evenly on the dough the sprinkle and spread some salt, same amchoor powder some red chilly powder and add the potato stuffing over it

Cover the stuffing with edges of the dough and roll it gently with a rolling pin see that stuffing should not come out of the dough apply equal pressure on the dough to make a circular shape in case if you find the dough sticky in-between sprinkle some flour over the dough then try to roll it again

To roast the paratha take a griddle or tawa heat to low to medium flame and place the rolled paratha over it

Roast one side of the paratha For seconds to light brown colour then flip it and roast the other side to light brown and add and some ghee or oil to make it more crispy and tasty

Take a plate place the roasted paratha and serve it with chilled curd, or hot tea or chutney or pickle of your choice
